Ingredients

  • 250g, Fusilli Pasta

  • 300g, Italian or Gourmet Sausages

  • 1 glass, White Wine

  • 2 Tbsp, The Salty Greek

  • Juice and Zest of one Lemon

  • 1 Tbsp, Butter

  • 1/2 Cup, Fresh Parmesan Cheese, grated

  • 1/4 Cup, Fresh Parsley, chopped

Recipe Steps

  1. Bring a pot of salted water to a boil.

  2. Squeeze the meat out of the sausage skins and put into a large saucepan. Break up the sausages using the back of a spoon or fork. Fry for a further 5-10 minutes until the sausage meat becomes crisp and golden brown.

  3. Add The Salty Greek, then pour the white wine, simmer for about 5 minutes then add the lemon zest and lemon juice.

  4. Cook your pasta. When the pasta has cooked al dente, drain it but reserve some of the cooking water (about 1 cup).

  5. Toss and coat your pasta into the sausage meat mixture, add butter, parmesan cheese, parsley and some of the reserved pasta water, this should give you a nice shiny sauce.

  6. Taste and check for seasoning.

  7. Serve with a little extra parmesan sprinkled over the top.

  8. Onjoy!

Tip: You can use a short cut pasta such as penne, orecchiette, macaroni, farfalle or bow tie that will catch the sausage meat sauce flavours.
