The Sweet, The Spicy & The Salty Greek Sauce (with the Mild Chilli Blend)
This is not just an ordinary sauce–in fact, it’s so extraordinary it has its own name! This sauce strikes a perfect balance of salt, heat & sweet–the chilli lingers, but doesn’t overpower the senses, making it suitable for most people’s spice tolerances.
Depending on the consistency you cook it down to, this sauce can be a transformed into a dip, dressing, glaze, jammy spread, basting sauce, marinade and beyond. It can be used to elevate meat, seafood, veggies, cheeses, and pastries.
As a Spread
Spread over toast, flatbread, crackers, crêpes, or pancakes. Spread over cheeses like feta or brie, and bake till gooey.
As a Sauce
Store in a sterilised glass jar or bottle in the fridge for up to 3 months opened. Pairs well with hot flaky pastries.
As a Dip
Dip in potato wedges, Crudités, pita bread, pear or apple slices, tortilla chips, fried wonton wrappers.
As a Glaze
Glaze tofu, tempeh, salmon, ribs, roast chicken, and hearty veggies like carrots or Brussels sprouts.
Recipe: The Sauce
MAKES ~1 CUP/250mL. PREP TIME: 10 mins. COOK TIME: 15−45 mins. VEGAN & GLUTEN FREE.
Ingredients
1 Onion, finely chopped
1/4 Cup, Ketchup
1/4 Cup, BBQ sauce
2 Tbsp, Apple Cider Vinegar*
1 Tbsp, Wholegrain Mustard*
1/4 Cup, Honey (Vegan Option use agave)
1/4 Cup, Maple Syrup
Recipe Steps
Combine all the sauce ingredients together and mix well.
Option One: Oven
Pre-heat oven 150-180°C.
Add this sauce to approx. 1kg of chopped roasting vegetables and/or protein of your choice, like chicken wings or pork ribs.
Slow cook in the oven for approx. 45 - 60 minutes or until cooked, you will notice the sauce darkening and caramelising. We recommend covering with foil half way.
Option Two: Stovetop
Combine all the sauce ingredients and low simmer in a medium saucepan for about 45 minutes. The onions will soften and caramelise, and the longer you cook it, the thicker the sauce will become.
Tips
You can substitute ingredients easily, like using tomato chutney, Dijon mustard, red wine vinegar, or a smoky BBQ sauce. If you have leftovers, cool down and store in refrigerator for up to 3 days.
Recipe: Slow Cooked Glazed Chicken Wings

Chicken wings, about 1.6kg
Recipe Steps
Combine all the sauce ingredients in a tray or roasting pan. Coat chicken wings evenly.
Bake in a preheated oven at 180°C. After 30 mins, turn and baste. Cover tray with foil.
Reduce heat to 140°C to bake for 1-2 hours, turning and basting every 30 mins.
Cook until meat is falling off the bone and the glaze has darkened and caramelised.
