Ginger, Lime & Chilli Lentils

How do you say lentils in Greek?
It’s ‘fakés’ – pronounced like ‘f**k yes’ – and, yes, this makes us laugh every time

Cooking your own lentils rather than just using the canned version makes all the difference – you will be amazed! Even if you’re not a fan of lentils, hopefully this recipe can change your mind. It’s fresh and uplifting, with punchy flavours. Not only lentils they nutritional but they’re also known to lower blood pressure and improve cholesterol and full of fibre. It’s also a healthy alternative to meat or animal products.

Soaking your lentils is highly recommended as this will help with the absorption in the body, eliminating the gas-causing elements and reducing the cooking time. Soaking time is a minimum of 2 hours. 4 hours is great but overnight is a bonus.



Ingredients

  • 1 1/2 Cup, Lentils *see note

  • 1 Tbsp, Cooking oil

  • 2 Tbsp, Grated ginger

  • 4-5 Kaffir Lime Leaves, thinly cut

  • 3 Cups, Vegetable or Chicken Stock

  • 1-2 Tbsp, The Salty Greek Mild Chilli Blend

  • String or Snake Beans

  • Lime juice

Recipe Steps

  1. Heat oil in a frying pan and add ginger, The Salty Greek, and kaffir lime leaves and coat well.

  2. Add the lentils and coat well.

  3. Add stock to the pan, simmer for about 15 minutes or until the lentils are cooked but still firm.

  4. In the meantime, steam beans.

  5. Squeeze the lime juice, taste and season with The Salty Greek, if required.

  6. Serve lentils on top of the steamed beans.

    Note: We recommend you soak your lentils - this will help with the absorption in the body, eliminates the gas-causing elements and reduces the cooking time.

    Soaking time minimum 2 hours, 4 hours is great but overnight is a bonus.

Tip: Replace string or snake beans with another vegetable of your choice and a bowl of steamed rice. We highly recommend a dash of lime juice or white balsamic vinegar, this tends to bring out the flavour of the lentils and calm down the chilli flavour.
