Gnocchi Mix – Spinach, Butter Beans & Sun-dried Tomatoes


Crispy pillows of gnocchi, hearty sun-dried tomatoes, melt-in-your-mouth butter beans, and vibrant green spinach – all elevated by an earthy and herby seasoning: The Salty Greek.

We actually surprised ourselves with how good this gnocchi salad turned out in and how quickly it comes together! It’s a recipe we come back to often, when we want something reliable and tasty. It’s easy to whip up for a warm dinner during weeknights, and is just as good cold for lunch the next day. It takes less than 15 minutes to make, with minimal clean up (no chopping, one pan!), and ingredients you probably already have in stock. Does it get better than this?



Ingredients

  • 1 pack, Gnocchi

  • 2 handfuls, Spinach

  • 1 can, Butter Beans

  • 2 Tbsp, Sun-dried tomatoes

  • 2 Tbsp, The Salty Greek

Recipe Steps

  1. Add butter to a pan and melt on medium heat to pan to fry gnocchi until lightly golden. Add in spinach to wilt while this happens.

  2. Transfer to a serving bowl. Add your choice of a white bean – we used butter beans.

  3. Add sun-dried tomatoes.

  4. Sprinkle a good heaping of The Salty Greek.

  5. Toss together to combine all ingredients with the seasoning. Serve and enjoy!

Tip: Add a squeeze of lemon juice to brighten the dish.
